You need these ingredients for four servings:

  • 17 oz. milk

  • 11 ounces of wheat flour

  • 6 eggs

  • 2.5 ounces of sugar

  • Some butter

  • A pinch of salt

  • Depending on taste, 1 untreated lemon

And that's how you prepare the pancakes:

Step 1:

Beat the six eggs in a clean, dry bowl until the egg whites and yolks are well mixed. Then add the flour and continue beating with the whisk until the mixture is even.

Step 2:

Add the milk to the dough and beat in with a whisk or a large spoon. The sugar can then follow the milk and finally the pinch of salt is added. If you continue to beat the dough, the pancake will later become fluffy and loose. If you want it to be more flat and compact, you can add the salt and then simply stir it.

In the end, the dough should be thick, but pourable. If it is too thin, you can add some more flour and stir again.

If you are satisfied with the consistency of the dough, put it in the fridge for 30 minutes.

Step 3:

While the dough takes a break from being beaten, you can already clean up your kitchen or also rest up a bit. Then it's pancake time.

Remove the dough from the fridge, grease the pan with butter and switch on the stove. Set the heat to medium or high so that the dough will start frying quickly. Take a large ladle and take one or two scoops. Pour the dough slowly into the pan and wait until it hardens on the surface.

Then you can turn the pancake over and let it fry for another moment. When it's done, you can put it on a plate and serve it. If you like, you can rub the peel of an untreated lemon over the pancake to give it a delicious aroma.

If you want to make the pancake especially nice to look at, you can decorate it with whipped cream. Sugar sprinkles, chocolate shavings, chopped nuts and fresh fruits also look very nice!
