You will not believe how easy this meal is to make. It requires just one skillet and simple ingredients to make an amazing dinner. The garlic chicken and mushrooms offer a healthy, delicious meal for your family.

Best of all, this meal is prepared in just one pot. This means that you only have to spend a couple of minutes cleaning up the dishes. If you are short on time, this recipe is an excellent option.

The Ingredients

  • 6 boneless chicken thighs
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • ¼ cup heavy cream
  • ½ teaspoon red pepper flakes
  • Salt and pepper
  • 8 ounces of cremini mushrooms, sliced
  • 1/3 cup red onions, finely diced
  • 2 tablespoons chopped parsley
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • ½ teaspoon dried thyme

The Recipe

1. Start out with the chicken thighs. They should be skinless so that they cook properly.

Use a mallet to pound them down to ½ inch in thickness. Then, sprinkle a pinch of pepper and salt all over the chicken.

2. Use a small bowl to mix the garlic, chicken broth, thyme, and red pepper flakes together.

3. Heat up a tablespoon of olive oil in a medium or large skillet. Turn the burner to medium-high heat.

Stir in the mushrooms and let them brown for three to four minutes. Now, put the mushrooms on a plate.

4. Heat another tablespoon of olive oil in the pan. Stir in the chicken and let it brown for two or three minutes on both sides. Place the chicken on the plate with the mushrooms.

5. Lower the heat to medium. Stir in the red onions with the chicken broth blend. With a whisk, scrape along the bottom of the pan so that nothing burns on the bottom.

Allow the sauce to reduce for 10 minutes. There should only be about ½ cup of sauce left.

6. Once the sauce has finished thickening, lower the heat. Add butter and whisk the mixture so that the butter melts.

Stir the mushrooms and chicken back into the mixture. Turn the heat up to a medium.

7. Cook for about four or five more minutes. Now, turn the heat to low. Stir in the cream and let it simmer until the chicken is done cooking.

Do not let the cream curdle. This should take about two more minutes.

8. Add chopped parsley or basil to the top of the food. You can also serve the dish on top of cooked egg noodles.
