The best part about this recipe is that it takes only about twenty-five minutes to create. The secret to unlocking the beauty behind this dish is using heavy cream, which creates an easy, creamy, and delicious homemade tomato soup that you will want to make over and over again.

You won't even need that many ingredients to pull this off. To make this soup, you will need the following:

  • one medium yellow or white onion
  • six tablespoons of butter
  • two 14.5 ounce cans of diced tomatoes
  • one 46 ounce bottle or can of tomato juice
  • three to six tablespoons of sugar
  • one to two tablespoons of chicken base
  • black pepper
  • one cup of sherry (which is optional)
  • one and half cups of heavy cream (which is optional, but we highly recommend using it)
  • one/fourth cup of freshly chopped basil
  • one/fourth cup of chopped flat-leaf parsley.

To begin making the tomato soup, start by melting the butter in a large pot or dutch oven. Then add in your chopped onion, stirring it around and cooking it until it becomes translucent. Then proceed to dump in the diced tomatoes and the tomato juice. Stir all of this together until the mixture is well mixed.

The next step is to add your sugar, little by little, and add more into the mixture as needed. The amount of sugar that you add to the concoction will gradually reduce the acidity of the tomatoes.

Then proceed to add in the chicken base and the black pepper. Bring your pot to a boil before cutting off the heat completely. Then you would add in the sherry if you have opted to include it in your recipe.

Then add in the basil, parsley, and heavy cream. Stir these ingredients until they are well combined.
