Sour cream and onion chips are a popular option. It seemed like these chips could not get any better, and then someone decided to put them in potato salad. Once you add the delicious chips to potato salad, you get a mind-blowing flavor.

Whether you are headed to a church picnic or just want a delectable lunch, this side dish will leave all of your friends raving. It adds a crunchy texture to potato salad that is unbelievably delicious.

If you are not a fan of sour cream and onion chips, you can always replace them in the recipe with dill pickle or regular chips. Salt and vinegar chips would also taste delicious in this recipe.

The Ingredients

  • Sour cream and onion potato chips
  • 8 medium Yukon gold potatoes
  • ½ cup mayonnaise
  • 1 ¼ cup sour cream
  • ¼ cup green onions
  • 1 teaspoon onion powder
  •  Freshly ground black pepper

Before you begin the rest of the recipe, chop up the potatoes into 1-inch cubes. Then, finely chop up the green onions and leave some on the side for a garnish. You will also want to crumble up the potato chips before you start making the recipe.

The Directions

1. Get out a large pot and place the potatoes in it. Cover the potatoes with water and add salt. Now, set the pot on a burner and bring it to a bowl. You should cook the potatoes for about 12 to 15 minutes until they are tender. Then, drain out the water and allow the potatoes to cool.

2. While the potatoes are cooling, get out a large bowl. Blend the mayonnaise, sour cream and onion powder together. Now, fold in the green onions and potatoes.

3. Cover the entire bowl with plastic wrap. You should leave this bowl in the refrigerator for at least an hour. If you are not leaving for your event for longer than that, the bowl can remain in the refrigerator for longer.

4. When you are ready to serve the potato salad, add pepper and salt to taste. Then, use your green onions as a garnish. You can also top the entire bowl with more crumbled chips if you want to.
