Queen's Pastry Chefs Publish Regal Easter Cookie Recipe

Just in time for Easter, the Royal Family Instagram account shared something very special: the recipe for the "Spiced Easter Biscuits" the Queen enjoys over the holidays. The post also included a video showing how it's done and a challenge asking everybody to try out the recipe at home and post the results.

The Queen and her family are trying to keep spirits high over the holidays in these troubled times. The royal Instagram account shared the full recipe for spiced easter biscuits with a short video showing some of the steps. It turns out the biscuits are actually very easy to make and require only basic ingredients. Followers of the Royals' Instagram account were asked to share their try at the recipe:

The recipe is easy to follow, but of course uses British conventions for measurements. In case you don't know your way around grams, we've converted the stated amounts for you in our version of the recipe - for the original, seemply visit the Royal Instagram account!

For the biscuit base, you need:

  1. 2 2/3 cups of plain flour
  2. 1 big tablespoon of bicarbonate soda
  3. 1/3 oz ground ginger (about two big tablespoon's worth)
  4. 1/3 oz cinnamon
  5. 1/2 cup of unsalted butter
  6. 7/8 cup of light soft brown sugar
  7. 1 egg
  8. 1/4 cup of golden syrup

And the icing takes:

  1. 2 egg whites
  2. 4 cups of icing sugar
  3. Food colouring of your choice!

For the instructions, we'll let the royal pastry chefs speak for themselves:

Biscuit Method:
• Preheat the oven to 170 C // 340 F
• Mix together the flour, bicarbonate of soda and spices in a bowl
• Add the diced butter and mix until a crumb texture
• Add the sugar
• Once all of the above is combined, add the egg and golden syrup
• Mix until a dough is formed
• Roll the dough to a thickness of 5mm
• Use biscuit cutters or a paper pattern to cut into desired shape
• Place the biscuits on a non-stick mat, or parchment paper and bake on the middle shelf for 12-15 minutes
• Bake until the biscuits maintain their shape when touched and are golden in colour
• Cool completely before icing

Icing Method:
• Add 1 egg white to 600g of icing sugar and beat until smooth
• The icing should pipe smoothly and be able to hold when piped as a line
• To cover all the biscuits with icing add extra egg white to thin the mixture
• Decorate and enjoy!
