- 2 cups all-purpose flour

- 1 ½ cups whole milk

- 1 tablespoon butter

- ½ cup vegetable oil

- 2 large eggs

- ¾ teaspoon paprika

- Kosher salt

- 2 teaspoons seasoned salt

- Freshly ground black pepper

- ¼ teaspoon cayenne pepper

Ingredients for the Gravy

- 3 to 4 cups whole milk

- Freshly ground black pepper

- 1/3 cup all-purpose flour

- ½ teaspoon seasoned salt

The Directions

1. Take out two medium bowls. In one bowl, mix the milk and eggs. In the other bowl, mix together the seasoned salt, flour, black pepper, cayenne and paprika. Then, pull out a clean plate for the breaded meat.

2. Do this process with one piece of tenderized meat at a time. Sprinkle both sides of the meat with black pepper and kosher salt. Then, dip the meat in the flour mixture and turn it over to cover both sides. Now, put the meat into the egg and milk mixture. Turn it over to coat the other side. Next, return the meat to the flour and turn it to coat both sides. Now that the meat has been breaded, set it on the clean plate and move on to the next piece.

3. Turn an oven burner to medium heat. Place the oil in a large skillet. Add in the butter and wait for it to sizzle. Cook three pieces of meat at a time. When you see the edges turn golden brown, flip them to the other side. It should take about two minutes to cook each side. After it is done cooking, move the meat to a plate topped with paper towels to absorb the oil. Continue this process until all of the meat has been cooked.

4. Once you are done frying the meat, pour the remaining grease into a heatproof bowl. Do not clean the skillet. Put the skillet back on the burner and turn the heat to medium-low. Pour ¼ cup of the grease into the skillet and let it heat up.

5. To make the gravy, wait for the grease to heat up. Then, sprinkle flour over the grease. Grab a whisk to mix the grease and flour together. Continue to cook the roux until it turns a golden-brown color.

6. Add the milk while whisking the mixture constantly. Whisk black pepper and seasoned salt into the gravy. Keep whisking for about 5 to 10 minutes until the gravy is thick and smooth. If it becomes too thick, add more milk. Taste the gravy to see if you need more pepper or salt.

7. Serve up the chicken fried steak with a heaping side of mashed potatoes.
