Ingredients Needed:

  • 6 Chicken breast without bones
  • 1 cup of flour (all purpose)
  • 3/4 cup of Panko (other breadcrumbs ok)
  • 1/2 cup of softened, unsalted butter
  • 1/4 cup parmesan cheese (grated is best)
  • 1/4 cup of minced parsley (fresh is best)
  • 3 beaten eggs
  • 2 cloves of minced garlic
  • 1 juiced lemon
  • vegetable oil
  • salt
  • pepper

Directions:

1. Preheat oven to 350 degrees. While the oven is preheating, in a medium mixing bowl, beat together your lemon juice, butter, garlic, and parsley. You can beat by hand or use an electric mixer. Don't forget to use salt and pepper to season.

2. Once your butter mixture is made, roll it out onto some plastic wrap. Place in the fridge while you continue. You will need some plastic wrap or parchment paper for the next step. Place the chicken breasts between two sheets.

Use a meat pounder and pound the chicken out until it is about 1/4 inch thick. If you do not have a meat pounder, you can slice the chicken breast in half and cut a pocket into them.

3. After you have the chicken prepared to correct thickness, remove butter mixture from fridge. Add a small cube to the middle of your chicken breast. Fold in the sides of the chicken breast to keep the butter inside. You can place a toothpick in chicken to help it stay together.

4. You will now need a large pan. Set temperature on medium, high heat. Pour a few inches of vegetable oil into pan. Let it heat until it would be hot enough to evaporate water. While waiting for your oil to heat up, it is time to set up your other ingredients.

You will need three bowls. Place your flour into the first bowl, beaten eggs into the 2nd bowl and panko with parmesan into the third bowl. Start the dipping process once the oil is ready. Take the breast, dip into the flour bowl, shake it off, dip into the egg bowl, and then into the the panko bowl.

5. After the chicken is fully coated, carefully place into your hot pan with oil. Rotate if needed so that all sides are golden brown. Have a plate lined with paper towels and ready to place your chicken on once it is done browning.

Once all chicken has been cooked and drained off a few seconds, transfer them onto a baking dish.

6. Your oven should be preheated by now. Place your baking dish in. Set timer for 15 minutes. After time goes off, check the chicken to see if it is fully cooked. If it isn't, cook up to an additional 3 minutes.

After chicken is done, take out of oven and serve to your family or loved ones. Chicken Kiev goes really well with any vegetable, garden salad, and potatoes.

It make take a few more steps than simply baking chicken, but the result is very taste pleasing. If you like chicken, you will love this buttery, rich dish! Who knew you could create such a restaurant worthy dish at home!
