Instructions: Wash and peel potatoes. Next, slice them into thin rounds about half a centimeter thick. Layer sliced potatoes in the bottom of your crock pot. Sprinkle salt and pepper on top of potatoes. Repeat these steps until all potato slices have been added to crock pot.

Use a pot to warm butter on stove over medium heat. Once butter is fully melted, sprinkle in flour and stir until flour is fully incorporated with butter; the mixture will resemble a thick dough. Add garlic and onions to the flour and stir. Whisk together for a few minutes, then gradually add the milk.

Next, add the cheese a little at a time; stir gently so the cheese becomes smooth and melted. Once the cheese mixture is fully melted, pour gently on top of the potatoes inside the crock pot. Once all the cheese is added to the potatoes, set your crock pot to cook for around three hours. Check the potatoes to see if they can be pierced easily with a fork. If not, wait another 15 – 20 minutes before checking again. When the potatoes are ready, sprinkle with chives and serve hot.
